761. Pears Poached in Red Wine
Pears poached in red wine is a classic dessert. I however decided to make it for breakfast. The alcohol gets cooked out so it’s totally fine and normal, right? I’m not normally the biggest fan of pears. When they’re nice, they’re really nice, but so often they’re just hard and weirdly stringy and have an odd perfumy taste. Poaching does tend to solve that problem though. Also, I was quite impressed with my decorative knife skills to make the frilly collar. I’m not always the most delicate and precise with things so this was good for me!

765. Liege Waffle
Liege waffles are a special kind of Belgian waffles. They’re round rather than rectangular, they’re a little bit more dense and cakey in texture, and the most defining feature of them is that they have big chunky sugar crystals throughout. I decided to go with the continental theme and cover mine in Nutella. I must admit I do prefer regular waffles. They’re lighter and crisper. And whilst the sugar crystals are kind of fun the first time you find one, after that they just tend to make the waffle overly sweet.

Halloumi is a grillable, fryable Cypriot cheese that I am so happy to have in my life. It is salty and a little chewy, making it a nice companion for fresh watermelon (this is a traditional pairing in Cyprus, I’ve read). I also find it to be a lovely complement to bitter greens and juicy…

It’s time for summer! And one of my favorite summer berries is the blueberry (don’t tell the strawberry, okay?). In my ode to summer (cupcake style) mini blueberry pies are baked into a vanilla cupcake and topped with a slightly tart lemon curd buttercream. YUM.
Summer has finally come to Seattle! It took awhile for all the rain and clouds to clear away, but today was nearly 80 degrees (which is high for Seattle), and I celebrated with some lemon bar-stuffed vanilla cupcakes topped with cream cheese frosting and a strawberry. SO GOOD!
And! I will be making these cupcakes again for a very special bake sale, happening next Saturday, July 14th, at the CakeSpy Shop in Seattle. All proceeds go to the families of the victims the May 30 shooting at Cafe Racer. Find out more here.
